A very common and delicious fried treat for those hot summer days in Puerto Rico. Perfect for days on the beach! These type of ingredients are what my mother uses and every recipe is different! Add your own spice to this dish!

Sofrito
Note
Sofrito is a Puerto Rican condiment.
Ingredients
4 heads garlic
3 large green bell peppers
2 medium red bell peppers
40 to 60 stems cilantro
20 to 30 stems recao
5 medium onions
1 tablespoon salt
Directions
Separate all of the garlic cloves from each other. Put into a container and fill with water until the garlic cloves are fully covered. Set aside. This will make peeling the garlic easier later on.
Wash the peppers, cilantro, and recao. Open the bell peppers and remove the stems and the seeds. Cut the peppers into strips along the length about 1/4 inch wide. Set aside.
Peel the onions and cut into 4 to 8 pieces each. Remove the garlic from the water and peel.
Mix all the items in a blender or a food processor, starting with the onions and the garlic. Add peppers, cilantro, and recao. Mix until everything is pureed.
Pour the contents of the mixture into a large container and add the salt. Mix by hand until the salt is distributed evenly.
Put a small amount of this mixture in a container in the refrigerator for everyday use and store the rest in the freezer.
Hint
Some people will add a small amount of vegetable oil (corn oil or olive oil) with achiote (annatto) for coloring and flavor. There are other things that may be added, such as oregano.
