Ingredients
1 cup shortening
1 cup onions, chopped
5 cups water
1 teaspoon salt
2 pounds cornmeal
5 eggs
1 cup cottage cheese
1 1/2 cups soft cheese, grated
2 teaspoons baking powder
1 tablespoon butter

Ingredients
1 cup shortening
1 cup onions, chopped
5 cups water
1 teaspoon salt
2 pounds cornmeal
5 eggs
1 cup cottage cheese
1 1/2 cups soft cheese, grated
2 teaspoons baking powder
1 tablespoon butter
Directions
- Melt the shortening, add onions, and sauté. Then add water. When water begins to boil, add salt and cornmeal, stirring constantly.
- Remove from heat and beat in eggs, cottage cheese (or sour milk), and cheese. Reserve a little cheese for the topping. If batter does not pour readily, add more cottage cheese (or sour milk). Then add baking powder. (If sour milk is used instead of cottage cheese, substitute 1 teaspoon of soda for baking powder.)
- Pour into a greased 10-by-12-inch pan. Garnish with butter and reserved cheese. Bake in 375°F oven for 40 minutes, or until golden brown.
