Peanut Butter Stew
Ingredients
2 tablespoons oil
1 1/2 pounds beef chuck or boneless chicken, cut into small pieces
1 medium onion, cut in rings
1 green pepper, cut in rings
6-ounce can tomato paste
3/4 cup peanut butter
3 cups water or broth
1 teaspoon salt
1 teaspoon chili powder or cayenne pepper
2 cups cooked white rice
Topping:
1 banana, sliced
1 orange, sliced
Coconut
Peanuts, chopped
1 green pepper, sliced
1 tomato, sliced
Directions
Heat oil in saucepan and brown meat on all sides. Remove from pan and set aside.
Cook onion and pepper rings until onion is yellow.
Stir tomato paste and peanut butter together in a bowl. Add water or broth, salt, and chili powder or cayenne pepper. Stir until mixture is smooth.
Add peanut butter mixture to vegetables in the pan. Add browned meat. Bring mixture to a boil and simmer 20 minutes.
Serve the stew over the rice. Add any combination of banana, orange, coconut, peanuts, green pepper, and tomato as a topping.
