This place is special to me because it is emotionally connected to my childhood. My dad was born in this region and we took this trip several times by ourselves and with our extended family when my sisters and I were little, and we have many fond memories and funny anecdotes from these trips. The south of the Dominican Republic is beautiful and it is very rich in biodiversity.

Almost every home in Dominican Republic prepares this traditional dessert at least once during Lent. And because it is always made in large quantities the custom is to share with friends and family especially during Holy Week
Moro de Habichuelas RojasRed Beans and Rice
Ingredients
2 cloves garlic, whole
1 teaspoon chopped onion
1/2 teaspoon salt
2 teaspoons oil
1/2 green pepper
3 to 4 sprigs of cilantro
Black pepper, to taste
1 chicken bouillon cube
1/2 can red beans, drained
2 cups water
1 1/2 cups rice, cleaned and rinsed with water
Salt, to taste
Directions

1/2 teaspoon salt
2 teaspoons oil
1/2 green pepper
3 to 4 sprigs of cilantro
Black pepper, to taste
1 chicken bouillon cube
1/2 can red beans, drained
2 cups water
1 1/2 cups rice, cleaned and rinsed with water
Salt, to taste
Directions
- Grind or crush the garlic, onion, and 1/2 teaspoon of salt in a pestle.
- In a pot, heat 1 teaspoon oil. Add crushed garlic, green pepper, cilantro, black pepper, and bouillon cube. Fry lightly over low heat for 1 minute. Add red beans, and fry lightly so the beans take the seasonings.
- Boil water, then add rice. Stir for 1 minute, and then cover and let boil for 10 minutes more. Reduce heat and add 1 teaspoon oil. Cover and simmer for 15 more minutes. Add salt to taste.
- Stir and serve warm.
