Ingredients
1 cup water
1/4 teaspoon ground cayenne pepper, if desired
1 cup butter
4 cups fresh ground corn, retain cobs
1 spoonful salt
5 spoonfuls sugar
1 teaspoon anise, in grain form
Cinnamon, if desired
8 slices of queso fresco (a soft white cheese) or fresh mozzarella
About 16 corn husks, plus 16 strips of husk for tying

1 cup butter
4 cups fresh ground corn, retain cobs
1 spoonful salt
5 spoonfuls sugar
1 teaspoon anise, in grain form

About 16 corn husks, plus 16 strips of husk for tying
Directions
- Place a large pot over high heat and boil the water. Add ground cayenne pepper, if using. Wait for water to evaporate. Add the butter and let the mixture cook for 5 minutes.
- As soon as it returns to a boil, remove from heat and add it to the four cups of ground corn in a separate bowl. Mix quickly and constantly while adding the salt and sugar. Add anise and, if desired, cinnamon.
- Place one or two spoonfuls of corn mixture and a slice of cheese on a corn husk and place the other husk on the top, folding the edges over and securing the husks with the pieces of thinly cut husks. Repeat until all corn mixture is gone.
- Line the bottom of a large pot with two rows of corn cobs stripped of their kernels. Cover them with corn husks. Pour boiling water into the pot until it covers the first row of cobs. Place the humintas on top and cover them too with husks.
- Cook the humintas over medium heat for around 45 minutes. A potato may be cooked with the humintas to help determine exactly when they are done. When the potato is cooked, the humintas will also will be ready. Serve them hot
